I've only really learnt how to make good muffins since spending some time in the states and these are my favourites! You can change the strawberries for blueberries or raspberries! They really are very simple, so simple even you could make them nd surprise somebody special this weekend!

Ceviche
Well i first started to appreciate raw fish while living for a year in Australia and being surrounded by plenty of it! There really are few things better than a nice bowl of Cerviche with a chilled glass of white wine, preferably under a tree near the sea. If you don't have said tree or sea at hand you can always make it and enjoy whatever your surroundings are! Freshness is the key here, you will be fighting a losing battle if the fish hasn't been caught within the last 24 hours! don't be scared to spend a little extra to get the quality that this recipe deserves!
Ingredients
800g Fresh white fish fllet(seabass, snapper or monkfish work best)
2 Limes(zest and juice)
1 Red pepper
1 Onion
200g green olives stuffed with pimentos, Or regular olives)
100g ketchup
50ml Vinegar
1 bunch chopped parsley
1 bunch chopped coriander
Salt and pepper

I know that a ot of people recoil in horror at the thought of having to cook fish thinking that some massive disaster is just around the corner if they even attempt it! Well here is a little 3 minute video that will dispel a lot of myths! I really could not make it any easier for you and believe it or not this is exactly how 90% of fish is cooked in good quality establishments. so don't look at that fish in the supermarket tomorrow and back away thinking you wouldn't know what to do with it, buy it and try this!

Scrambled eggs
This might seem like a stupidly easy thing to post a recipe for but i guarentee the nuber of people who can actually cook scrambled eggs properly are very few and far between. The amount of times i have eaten dry scrambled eggs are too many to count! This will take you literally 3 minutes to make and could not be any easier! Lets face it, if you can't make this you are in big trouble cooking wise!

Chicken and Vegetable broth
This is a beautiful recipe for a broth. I made it as a couple of people on the boat were feeling a bit under the weather and i perked them up immediately!!
Ingredients
2 Litres chicken stock
3 Mixed peppers
3 sticks of celery
4 large carrots
3 white onions
5 cloves garlic
For the greens in the bowl
200 grams mange touts
200 grams sugar snap peas
1 bunch coriander
1 bunch parsley
1 packet buckwheat noodles

Blondies
A blondie is a brownie without the chocolate therefore it is white and called a blondie! What a great name! It's kind of like a cross between a chocolate chip cookie and a brownie! Really really nice for the kids!
